One of my favorite comfort snacks is rice pudding.  It's very nostalgic to me and holds a very special place in my hear.  My Grandmother made it and unfortunately, not one person in the family learned to make it before she became an ancestor.  Yet, every few months, I feel a raging craving for it.  I like to think in those times, Grandma is around me.  Anywho....Since I'm always trying to find healthier ways to eat things I like. I had the idea of making a chia rice pudding.  After scouring the internet and trying to work with AI to find a way to make this work, I think I have a strong possibility.  I will report back once it's done.
